Everyone keeps telling us that you are so lucky to become a part of our family. But every time we hear it, it doesn’t sound quite right. Because, WE, your Baba and I, are the lucky ones. We are lucky that we get to adopt. We are lucky that YOU’RE the little girl we were matched with this year and that we are going to be a family very soon!
We wrapped some presents. Found some birthday PJs (because birthday EVE is totally a thing in this house!). I picked out the most adorable striped jumper for your birthday party outfit. And then I baked you a lucky charm themed cake, we lit some candles and celebrated your 6th birthday week.
You are so loved, little lady. As your Baba would say, it’s birthday eve EVE!
For my friends looking to change things up in the cake department, here’s how to get a Lucky Charm flavored cake of your own.
I used a Pamela’s gluten-free cake mix since I don’t really eat gluten but you can use any kind of cake mix, or homemade vanilla cake recipe that you like. I did 4 eggs instead of 3, used avocado oil and instead of plain milk I used “lucky” milk. I soaked 1 cup of Lucky Charms cereal in 1 Cup of milk for 20 minutes to get all that yummy, cereal flavor into that milk. Strain out the cereal and then use the appropriate amount of milk like the mix calls for.
And now, without further ado, my frosting recipe.
4 Sticks of butter (use the real, salted stuff), 2 lbs of powdered sugar and 1/2-1 Cup of cereal milk. (Just repeat the above process to make the milk) 2 tsp of your flavoring of choice. If any. I just went with the cereal milk. The secret to really great frosting is letting the butter whip on high for about 10 minutes before adding anything else. It’ll be light and super fluffy and double in size. Then add the powdered sugar and slowly pour in the milk a Tbs at a time until you have the consistency you’d like.
That’s about it! Frost your cake and enjoy! I cut a hole in the middle of my bottom two cake layers and then filled the hole with more cereal for an extra surprise! (Jing Ya!)
